Ingredients:
  • 2 eggs
  • 245 g (1 cup + 2 tbsp) butter, melted
  • 130 g (2/3 cup) brown sugar
  • 50 g (1/4 cup) granulated sugar
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 340 g (2 3/4 cups) all-purpose flour
  • 50 g (1/3 cup) white chocolate chunks
  • 10 crushed Oreo pieces
  • 5 crushed Oreo pieces for topping
Directions:
  1. Preheat the Oven: Start by preheating your oven to 175°C (350°F). Line a baking pan with parchment paper, ensuring the edges extend beyond the pan for easy removal later.
  2. Mix the Wet Ingredients: In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk the mixture until it’s smooth and well-blended.
  3. Add the Eggs and Vanilla: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract until the mixture is smooth and combined.
  4. Combine the Dry Ingredients: Sift the flour, salt, and baking soda into the wet mixture. Using a spatula, gently fold the ingredients together until just combined, being careful not to overmix.
  5. Incorporate the Mix-Ins: Add the white chocolate chunks and 10 crushed Oreo pieces to the batter. Fold them in gently with a spatula until they are evenly distributed throughout the dough.
  6. Prepare for Baking: Pour the batter into your prepared baking pan, spreading it out evenly with a spatula. Sprinkle the remaining 5 crushed Oreo pieces over the top for an extra crunch.
  7. Bake: Place the pan in the preheated oven and bake for 35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the bars to cool in the pan for 10-15 minutes before transferring them to a wire rack to cool completely. Once cooled, slice them into bars and enjoy!
