Ingredients:
Cookie Base:
  • 170 g (¾ cup) unsalted butter, softened
  • 100 g (½ cup) light brown sugar
  • 50 g (¼ cup) granulated sugar
  • 1 ½ large eggs (you can beat 2 eggs and use about ¾ of the mixture)
  • ¾ tbsp vanilla extract
  • 250 g (2 cups) all-purpose flour
  • 50 g (½ cup) unsweetened cocoa powder
  • ¾ tsp baking soda
  • ½ tsp salt
Chocolate Frosting:
  • 113 g (½ cup) unsalted butter, softened
  • 180 g (1 ½ cups) powdered sugar
  • 30 ml (2 tbsp) heavy whipping cream
  • 25 g (¼ cup) unsweetened cocoa powder
  • 1 tsp vanilla extract
Topping:
  • ½ cup mini marshmallows
Directions:
Making the Cookies
  1. Preheat and Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with a silicone mat or parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
