  • 115 g (1/2 cup) unsalted butter, softened to room temperature
  • 120 g (1/2 cup + 1 tbsp) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 80 g (2/3 cup) white chocolate, roughly chopped, plus a handful extra for topping
Directions:
  1. Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper. Set aside.
